Method
 

Preparation Steps
  1. Preheat the oven to 180°C (355°F).
  2. In a mixing bowl, combine minced lamb or beef, chopped onions, salt, white pepper, nutmeg, allspice, and beef or lamb stock.
  3. Melt lard or shortening with water in a saucepan over low heat, then cool slightly.
  4. Mix the warm lard mixture into a well made in plain flour until a shaggy dough forms.
  5. Knead the dough gently on a floured surface for 2-3 minutes until smooth.
  6. Roll out two-thirds of the dough for the bases and one-third for the lids.
  7. Fill the pie bases with the meat mixture, packing it tightly.
  8. Roll out the lids and crimp the edges to seal, cutting holes for steam.
  9. Glaze the tops with beaten egg.
  10. Bake for 40-45 minutes until golden brown and bubbling.
  11. Allow to cool slightly before serving.
