  • 1 medium Lemon Use both zest and juice for brightness.

Step‑by‑Step Instructions
  1. Prepare your charcoal grill to a high temperature of around 280°C (550°F). Gather tongs and a grill brush for oiling the grates.
  2. Heat 3 tablespoons of extra virgin olive oil in a small pan over low to medium heat. Add finely chopped garlic and sliced chilli, stirring gently for 3-5 minutes until garlic is light golden.
  3. In a large bowl, combine fresh prawns with half of the garlic and chilli sauce, tossing them gently for 2-3 minutes until well-coated.
  4. Place the marinated prawns on the preheated grill. Cook for 2-4 minutes on each side until the shells turn pink and the meat is pearly white.
  5. Remove grilled prawns from the grill, drizzle the remaining sauce over them, and serve with fresh lemon wedges.
