- Prepare your charcoal grill to a high temperature of around 280°C (550°F). Gather tongs and a grill brush for oiling the grates.
- Heat 3 tablespoons of extra virgin olive oil in a small pan over low to medium heat. Add finely chopped garlic and sliced chilli, stirring gently for 3-5 minutes until garlic is light golden.
- In a large bowl, combine fresh prawns with half of the garlic and chilli sauce, tossing them gently for 2-3 minutes until well-coated.
- Place the marinated prawns on the preheated grill. Cook for 2-4 minutes on each side until the shells turn pink and the meat is pearly white.
- Remove grilled prawns from the grill, drizzle the remaining sauce over them, and serve with fresh lemon wedges.
