  • 1 cup Heavy Cream Chilled
  • 8 ounces Mascarpone Cheese Room temperature
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
For the Soaking Mixture
  • 1 cup Strong Brewed Espresso/Coffee Cooled
  • 1/2 cup Amaretto Liqueur Can substitute with almond extract
For the Base
  • 24 pieces Ladyfinger Cookies (Savoiardi)
For the Cherry Layer
  • 1 cup Cherry Preserves/Pie Filling
  • 1 cup Fresh Cherries Pitted and halved or whole
For the Finishing Touches
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1/4 cup Shaved Chocolate/Sliced Almonds Optional

Method
 

Step-by-Step Instructions
  1. Whip chilled heavy cream on medium speed until soft peaks form, about 3-4 minutes.
  2. Fold in mascarpone cheese, powdered sugar, and vanilla extract into the whipped cream until fully combined.
  3. Combine cooled espresso and amaretto in a shallow dish, mixing well.
  4. Dip ladyfingers into the espresso mixture for just 1-2 seconds and line the bottom of a 9x9-inch dish.
  5. Spread half of the mascarpone mixture evenly over the soaked ladyfingers.
  6. Spoon half of the cherry preserves over the mascarpone layer.
  7. Repeat layers with more soaked ladyfingers and the remaining mascarpone mixture.
  8. Top with remaining cherry preserves and fresh cherries as desired.
  9. Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  10. Before serving, dust with cocoa powder and add optional garnishes.
