- Whip chilled heavy cream on medium speed until soft peaks form, about 3-4 minutes.
- Fold in mascarpone cheese, powdered sugar, and vanilla extract into the whipped cream until fully combined.
- Combine cooled espresso and amaretto in a shallow dish, mixing well.
- Dip ladyfingers into the espresso mixture for just 1-2 seconds and line the bottom of a 9x9-inch dish.
- Spread half of the mascarpone mixture evenly over the soaked ladyfingers.
- Spoon half of the cherry preserves over the mascarpone layer.
