  • 2 tablespoons Matcha Powder Choose high-quality matcha for the best flavor.
  • 1 teaspoon Baking Powder For rising.
  • 1/4 teaspoon Salt
  • 2 tablespoons Unsalted Butter Can substitute with neutral oil.
  • 1 cup Whole Milk For dairy-free, use coconut milk.
  • 1/4 cup Honey Maple syrup or granulated sugar can be used.
  • 1 medium Egg A flax egg can be used for a vegan alternative.
  • 1 teaspoon Vanilla Extract

Method
 

Baking Instructions
  1. Preheat your oven to 325°F (165°C).
  2. Lightly grease 6 cups of a muffin tin with unsalted butter.
  3. In a medium mixing bowl, whisk together glutinous rice flour, matcha powder, baking powder, and salt until blended.
  4. In a separate bowl, whisk together whole milk, egg, honey, melted unsalted butter, and vanilla extract until smooth.
  5. Gently fold the dry ingredients into the wet mixture, stirring until smooth and syrup-like.
  6. Carefully divide the batter evenly among the greased muffin cups, filling each about three-quarters full.
  7. Bake for 25-30 minutes or until puffy and golden.
  8. Let the mochi bites cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar or drizzle melted dark chocolate before serving.
