Step-by-Step Instructions

  2. Slice each sweet potato in half lengthwise and brush with olive oil cut side up.
  3. Sprinkle kosher salt and black pepper evenly over the halves. Score the flesh lightly.

  5. Roast the sweet potatoes in the oven for about 30 minutes until fork-tender and golden brown.
