- Make a slit lengthwise in each Medjool date and remove the pit.
- Stuff each date with peanut butter and sprinkle chopped peanuts inside.
- In a bowl, combine chocolate chips and coconut oil. Microwave until smooth.
- Dip each stuffed date into melted chocolate, allowing excess to drip off.
- Sprinkle sea salt over coated dates while chocolate is still wet.
- Refrigerate for about 30 minutes until chocolate hardens.
