- In a shallow dish, whisk together 4 large eggs, 1 cup of coconut milk, 1 teaspoon of vanilla extract, and 1/2 cup of shredded coconut until well combined.
- Submerge thick slices of brioche bread into the custard mixture for 2-3 minutes on each side.
- Preheat a griddle to 350°F (175°C). Lightly coat with cooking spray or butter.
- Carefully place soaked brioche slices on the griddle and cook for about 3 minutes on one side, then flip and cook for an additional 2 minutes.
