- Preheat your oven to 375°F (190°C). Chop the zucchini, red bell pepper, and cherry tomatoes into bite-sized pieces. Toss them in a bowl with olive oil, oregano, salt, and pepper. Spread the vegetables on a baking sheet and roast for 15 minutes.
