Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Chop the zucchini, red bell pepper, and cherry tomatoes into bite-sized pieces. Toss them in a bowl with olive oil, oregano, salt, and pepper. Spread the vegetables on a baking sheet and roast for 15 minutes.
  2. In a mixing bowl, combine cottage cheese with eggs and half of the mozzarella cheese. Mix until smooth. This will be the base for your bake.
  3. Grease a baking dish with olive oil. Layer the roasted vegetables, then pour the cottage cheese mixture over them, spreading evenly.
  4. Sprinkle remaining mozzarella cheese and Parmesan cheese on top.
  5. Bake for 30-35 minutes until golden brown and bubbly. The aroma will invite everyone to the table.
  6. Allow the bake to rest for 10 minutes. Garnish with basil or parsley before serving.
