- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish with parchment paper or cooking spray.
- In a large mixing bowl, whisk together the cottage cheese, eggs, and maple syrup (if using) along with vanilla extract until smooth. Add almond flour, baking powder, cinnamon, and salt. Stir in grated carrot until just mixed.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until the top is golden and a toothpick comes out mostly clean.
