  • 1/2 cup Yogurt use any plant-based yogurt
For the Crumble
  • 1 cup Oats gluten-free oats can be used
  • 1/2 cup Walnuts replace with pecans or omit for nut allergies
For the Apples
  • 2 cups Apples use fresh bananas for a non-cooked option
  • 1/4 cup Apple Butter can be replaced with sautéed apples

Method
 

Preparation Steps
  1. Blend the yogurt, apple butter, medjool dates, miso paste, cinnamon, cardamom, and soy milk in a high-speed blender until smooth.
  2. Pour the blended mixture over chia seeds in a bowl, whisk to combine, and let sit for 5 minutes before whisking again.
  3. For the crumble, pulse oats, walnuts, and medjool dates in a food processor until crumbly.
  4. Cook diced apples with maple syrup and a sprinkle of cinnamon in a saucepan for 5–7 minutes until softened.
  5. Layer the chia pudding mixture, then stewed apples, and top with crumble in serving jars.
  6. Serve immediately or store in the fridge, keeping the crumble separate until serving.
