Base
  • 1 cup Cashews Soaked until creamy, or substitute with pepitas or sunflower seeds for nut-free
  • 1 cup Green Chilies Canned for convenience
  • 1/4 cup Pickled Jalapenos Fresh or jarred
  • 2 tablespoons Lemon Juice Freshly squeezed, lime can be used as a substitute
  • nutritional yeast 1/4 cup For cheesy flavor
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder
  • 1 cup Plant-Based Milk Unsweetened, can use almond, soy or oat milk
Optional Add-Ins
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Cayenne Pepper For more heat

Method
 

Instructions
  1. Soak the cashews in water for 20–30 minutes or boil water and pour over them. Drain and set aside.
  2. In a blender, combine soaked cashews, green chilies, pickled jalapenos, lemon juice, nutritional yeast, smoked paprika, chili powder, and plant-based milk. Blend until smooth and creamy.
  3. Taste the mixture and add salt gradually, blending to incorporate. Adjust seasoning as needed.
  4. Store any leftovers in an airtight container in the fridge for up to 7 days or freeze for up to 1 month.
