  • 2 large Eggs Fresh
  • 1 cup Almond Meal/Flour Can substitute breadcrumbs
  • 1 cup Sharp Cheddar Cheese, shredded Or mozzarella for a milder taste
  • 2 cloves Garlic, minced Fresh
  • 1 tsp Salt Optional
For Serving (Optional)
  • 1 cup Natural Yogurt For dip
  • 2 tbsp Lemon Juice For dip
  • 1 clove Garlic, minced For dip
  • to taste Salt and pepper For seasoning dip

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the broccoli into small stems and florets. Steam the stems for 1 minute, then add florets and steam for an additional 3-4 minutes until tender.
  3. Chop the cooled broccoli into small pieces and transfer to a mixing bowl. Add sharp cheddar cheese, eggs, almond meal, and minced garlic; mix until well combined.
  4. Scoop the mixture into small oval shapes and place them on the baking sheet, spaced appropriately.
  5. Optionally, lightly spray the tops with cooking oil, then bake for about 20 minutes or until crispy and golden.
  6. Let the tots cool on the baking sheet for a few minutes, then serve warm with your favorite dip.
