Step-by-Step Instructions
  1. Start by peeling your starchy Russet potatoes and chopping them into even chunks. Place in a pot of salted water and boil for 15-20 minutes until fork-tender. Drain and cool.
  2. Mash the cooled potatoes until smooth. Mix in grated mozzarella cheese, flour, eggs, salt, pepper, and spices until well incorporated.
  3. Scoop portions of the mixture and roll into sticks about 3-4 inches long. Ensure uniform sizing. Place on a lined plate or sheet.
  4. Heat 1-2 inches of vegetable oil in a skillet to around 350°F. Fry the sticks in batches, cooking each side for 3-4 minutes until golden brown.
  5. Transfer fried sticks using a slotted spoon to a plate lined with paper towels to drain excess oil. Let cool slightly before serving.
