- Start by peeling your starchy Russet potatoes and chopping them into even chunks. Place in a pot of salted water and boil for 15-20 minutes until fork-tender. Drain and cool.
- Mash the cooled potatoes until smooth. Mix in grated mozzarella cheese, flour, eggs, salt, pepper, and spices until well incorporated.
- Scoop portions of the mixture and roll into sticks about 3-4 inches long. Ensure uniform sizing. Place on a lined plate or sheet.
- Heat 1-2 inches of vegetable oil in a skillet to around 350°F. Fry the sticks in batches, cooking each side for 3-4 minutes until golden brown.
- Transfer fried sticks using a slotted spoon to a plate lined with paper towels to drain excess oil. Let cool slightly before serving.
