  • 2 cups all-purpose flour sifted for lightness
  • 4 tablespoons sesame oil can substitute with a neutral oil
  • 1/2 cup honey or maple syrup for vegan version
  • 2 tablespoons rice wine can be replaced with mild vinegar or omitted
  • 1 tablespoon ginger freshly grated
For Frying
  • 4 cups vegetable oil heated to 350°F (175°C)
  • 1 cup water to adjust syrup thickness
For the Syrup
  • 1 cup honey good quality
  • 3/4 cup water to achieve desired syrup consistency
  • 1 tablespoon grated ginger for flavor enhancement

Method
 

Making the Cookies
  1. Blend together all-purpose flour, sesame oil, honey, and rice wine. Knead for 5–7 minutes until smooth, then let rest for 30 minutes under a damp cloth.
  2. Prepare the syrup by combining honey, water, and grated ginger in a saucepan. Heat to a gentle boil and simmer for about 10 minutes.
  3. Divide dough into golf ball-sized portions and shape into 1/4-inch thick molds. Place on a parchment-lined tray.
  4. Heat vegetable oil in a deep pan to 350°F. Fry cookies in batches for 3–4 minutes until golden brown, then drain on paper towels.
  5. Soak cookies in the prepared syrup for at least 2–3 hours or overnight for deeper flavor.
  6. Serve cookies on a platter, optionally with warm green tea.
