For the Creamy Sauce
  • 1 ripe Avocado Greek yogurt can be an alternative
  • 1/2 cup Yogurt Dairy-free yogurt can be used for vegan option
  • 2 tablespoons Lime Juice Lemon juice can substitute

Method
 

Cooking Instructions
  1. Cook red lentils by combining 1 cup with 2 cups of water, boil then simmer for 10-12 minutes until tender. Drain and cool.
  2. In a large bowl, mix cooled red lentils with grated sweet potato, chopped onion, minced garlic, cumin, paprika, cilantro, flour, salt, and pepper until well combined.
  3. Let the mixture rest for 5-10 minutes to help ingredients bind.
  4. Heat olive oil in a skillet over medium heat, shape the mixture into patties, and fry for 3-4 minutes on each side until golden brown.
  5. Blend avocado, cilantro, garlic, yogurt, and lime juice until smooth to make the creamy sauce. Adjust consistency with water if necessary.
  6. Serve crispy patties hot with creamy avocado sauce drizzled on top or as a dip.
