Step‑by‑Step Instructions
  1. Whisk together 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, and a pinch of salt in a large mixing bowl.
  2. In a separate bowl, mix ½ cup of milk, 1 egg yolk, and 2 tablespoons of melted unsalted butter until smooth.
  3. Heat enough canola or vegetable oil in a deep pot to submerge the fritters—about 2 inches deep—and reach 375°F.
  4. Core and slice 2 medium apples into thick rings, about ½ inch each, and toss in lemon juice.
  5. Whip the egg whites from 1 egg until stiff peaks form, then gently fold them into the combined dry and wet ingredients.
  6. Dip each apple ring into the batter, allowing any excess batter to drip off before placing in hot oil.
  7. Fry the coated apple rings for about 2 minutes on each side until golden brown and crispy.
