Ingredients
  

For the Puff Pastry Cups
  • 1 package Puff Pastry Use store-bought, chilled for best texture.
For the Chicken Salad
  • 2 cups Chicken Roasted, rotisserie, or freshly cooked.
  • 1 cup Greek Yogurt Can substitute with sour cream.
  • 1 cup Sweet Grapes Diced, can also use diced apples or pears.
  • 1 cup Celery Chopped, can substitute with bell peppers.
  • 2 tablespoons Chives Finely chopped for garnish.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Roll out chilled puff pastry and cut out 3-inch circles. Stack circles with parchment paper in between and chill for 15 minutes.
  2. Place stacked circles on a lined baking sheet and bake for 15-18 minutes until golden brown. Cool on a wire rack.
  3. Combine shredded chicken, Greek yogurt, diced grapes, chopped celery, salt, and pepper in a mixing bowl, mix until well-coated.
  4. Cut a small circle out of the center of each cooled pastry cup to create a well. Fill each with chicken salad, mounding slightly over the edges.
  5. Garnish with chopped chives just before serving. Enjoy while warm and crisp.
