- In a blender or food processor, add 2 cups of cottage cheese, 1 cup of fresh raspberries, 2-3 tablespoons of honey or maple syrup, and 1 teaspoon of vanilla extract. Blend on medium speed for about 1-2 minutes until the mixture is completely smooth and creamy, with vibrant raspberry flecks throughout.
- Carefully spoon the mousse into four serving glasses or bowls, filling each glass to about three-quarters full.
- Cover each glass with plastic wrap or a lid and place them in the refrigerator. Allow the mousse to chill for at least 1 hour.
