Preparation
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with nonstick spray.
- In a large bowl, whisk together eggs and milk until frothy. Season with salt and pepper.
- Gently fold in diced bell peppers, chopped spinach, crumbled bacon or sausage, cheese, and fresh herbs.
- Pour the mixture evenly into the muffin cups, filling them about three-quarters full.
- Bake in the preheated oven for about 15 minutes, or until set and lightly golden.
- Let cool in the muffin tin for 5 minutes before removing carefully.
- Allow to cool on a wire rack before serving. Enjoy warm or store for meal prep.
