Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with nonstick spray.
  2. In a large bowl, whisk together eggs and milk until frothy. Season with salt and pepper.
  3. Gently fold in diced bell peppers, chopped spinach, crumbled bacon or sausage, cheese, and fresh herbs.
  4. Pour the mixture evenly into the muffin cups, filling them about three-quarters full.
  5. Bake in the preheated oven for about 15 minutes, or until set and lightly golden.
  6. Let cool in the muffin tin for 5 minutes before removing carefully.
  7. Allow to cool on a wire rack before serving. Enjoy warm or store for meal prep.
