Ingredients
  

For the Salmon Mixture
  • 1 lb Fresh Salmon Fillet Can use thawed frozen salmon
  • 1/4 cup Fresh Parsley Finely chopped
  • 1/4 cup Fresh Cilantro Finely chopped
  • 1/2 cup Breadcrumbs Or almond flour for gluten-free
  • 1 Large Egg Acts as a binder
  • 2 cloves Garlic Minced
  • 1 tsp Smoked Paprika Regular paprika works for milder flavor
  • 1 tsp Lemon Zest For flavor brightness
  • Salt and Black Pepper To taste
  • 2 tbsp Olive Oil For grilling
For the Avocado Sauce
  • 1 Ripe Avocado Fresh for best texture
  • 1/4 cup Greek Yogurt Or sour cream
  • 2 tbsp Lime Juice Fresh lemon juice can work
  • 1 clove Garlic Minced

Method
 

Preparation
  1. Finely chop the fresh salmon or pulse it in a food processor until broken down but not puréed. In a large mixing bowl, combine salmon with parsley, cilantro, breadcrumbs, egg, garlic, paprika, lemon zest, salt, and pepper. Stir until well combined and sticky, about 5 minutes.
  2. With clean hands, take a portion of the salmon mixture and roll into a ball, 2 inches in diameter. Repeat until all mixture is shaped into 12-14 balls on a parchment-lined tray.
  3. Heat olive oil in a non-stick skillet over medium heat. Add salmon balls carefully, leaving space between them. Grill for 3-4 minutes on each side until golden brown and cooked through.
  4. Prepare the avocado sauce while grilling. In a blender, combine avocado, cilantro, Greek yogurt, lime juice, and garlic. Blend until smooth and adjust seasoning with salt and pepper.
  5. Once the salmon balls are cooked, transfer them to a serving platter. Drizzle avocado sauce over or serve on the side.
