  • 1 cup Greek Yogurt or Cream Cheese; opt for plant-based yogurt for vegan

Method
 

Preparation
  1. Crush graham crackers in a food processor until fine. Combine with melted butter in a bowl, pressing into a 9-inch pie dish. Chill crust for 15 minutes.
  2. Blend blueberries until smooth. In a separate bowl, whisk chia seeds, sugar, lemon juice, and salt. Fold in blueberry mixture and Greek yogurt. Rest for 5-10 minutes.
  3. Spoon filling into chilled crust and smooth top with a spatula. Chill for at least 2 hours or overnight.
  4. Garnish with fresh blueberries and serve cold. Use a sharp knife dipped in warm water to slice.
