  • 1 pound Large shrimp (16/20) Fresh, shelled, and deveined
  • 2 cups Ice For chilling the shrimp
For the Dipping Sauces
  • 1 cup Cocktail sauce Tangy blend of ketchup and horseradish
  • 1/2 cup Cajun aioli Mix of mayonnaise, ketchup, Worcestershire sauce, and cajun seasoning
For the Garnishes
  • 2 stalks Celery sticks Crisp and fresh
  • 1 medium Cucumber Sliced
  • 1 medium Lemon Cut into wedges
  • 2 tablespoons Minced chives For garnish

Method
 

Preparation
  1. Fill a large pot with water and add a pinch of salt, then bring it to a rolling boil.
  2. Prepare a large bowl filled with ice and cold water to create an ice bath.
  3. Once the water is boiling, carefully add the shrimp and cook for 2-3 minutes.
  4. Transfer the shrimp to the ice bath immediately.
  5. In a small bowl, whisk together mayonnaise, ketchup, Worcestershire sauce, and Cajun seasoning.
  6. Blend ice in a food processor until it resembles fluffy snow.
  7. On a large serving tray, spread out the crushed ice and arrange the shrimp on top.
  8. Place bowls of cocktail sauce and cajun aioli in the center.
  9. Arrange the garnishes around the shrimp.
