For the Pasta
  • 12 shells Dried Manicotti Shells Cook al dente for best results.
  • 1 spray Nonstick Cooking Spray Or drizzle of olive oil.
For the Filling
  • 1 cup Chopped Fresh Mushrooms Can swap with finely chopped spinach.
  • 3/4 cup Shredded Carrots Substitute with finely diced zucchini.
  • 3-4 cloves Minced Garlic Adjust according to your garlic love!
  • 1 cup Light Ricotta Cheese Or use low-fat cream-style cottage cheese.
  • 3 oz Shredded Reduced-Fat Mozzarella Cheese Can use regular mozzarella.
  • 2 large Eggs Lightly beaten.
  • 1/4 cup Grated Parmesan Cheese Substitute with nutritional yeast for vegan.
  • 2 tsp Dried Italian Seasoning Crushed.
For the Sauce
  • 14.5 oz Canned Diced Tomatoes Undrained.
  • 1 cup Bottled Roasted Red Sweet Peppers Drained and chopped.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a baking dish with nonstick cooking spray.
  2. Sauté chopped mushrooms and minced garlic in olive oil over medium heat for about 5-7 minutes.
  3. In a mixing bowl, combine the light ricotta, shredded mozzarella, eggs, parmesan, carrots, sautéed mushrooms, and Italian seasoning, mixing until creamy.
  4. Carefully fill each manicotti shell with the cheese mixture using a piping bag or spoon.
  5. Spread the canned diced tomatoes evenly across the bottom of the baking dish.
  6. Drizzle chopped roasted red sweet peppers on top and sprinkle with any remaining mozzarella.
  7. Cover with aluminum foil and bake in the oven for 40 minutes, then uncover and bake for an additional 10-15 minutes.
  8. Let the manicotti rest for about 5 minutes before serving.
