Step-by-Step Instructions for Zucchini Lasagna
  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice the zucchini into 1/8-inch thick pieces. Lay on paper towels, sprinkle with salt, and let sit for about 10 minutes.
  3. Place the zucchini slices on a parchment-lined baking tray and pre-bake for about 10 minutes. Pat dry afterward.
  4. Combine the drained ricotta, Parmigiano Reggiano, minced garlic, egg, salt, pepper, and chopped basil in a mixing bowl. Mix until smooth.
  5. In a 13x9 inch baking dish, layer with marinara sauce, zucchini slices, ricotta mixture, and mozzarella cheese. Repeat layers finishing with marinara and mozzarella.
  6. Bake uncovered for 40-45 minutes until the cheese is bubbly and golden. Watch closely.
  7. Switch to broil for an additional 1-2 minutes for a golden top.
  8. Let rest for 10-15 minutes, garnish with fresh basil, then slice and serve warm.
