Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9-inch pie dish or an 8×8-inch baking dish with a light coating of cooking spray or olive oil.
  3. In a food processor, add the cottage cheese and blend it until smooth, about 30 seconds.
  4. In a large mixing bowl, crack the eggs and whisk until well beaten, then fold in the blended cottage cheese, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper.
  5. If adding any vegetables, fold them into the egg mixture now, ensuring any excess moisture is drained.
  6. Pour the egg and cottage cheese mixture into the prepared baking dish and spread it evenly with a spatula.
  7. Place the baking dish in the preheated oven and bake for 15 to 17 minutes, looking for the edges to set while the center still has a slight jiggle.
  8. Remove the dish from the oven and let the Baked Cottage Cheese Eggs rest for 2 to 3 minutes before cutting into squares or wedges to serve.
