  • 1/4 cup Cocoa Powder Ensure it’s unsweetened

  • 1 tbsp Flax Meal Acting as an egg replacement
  • 1/4 cup Plant Milk Any variety like almond, soy, or oat works well
For the Cookie Layer
  • 1 cup Flour Spoon into measuring cups for accuracy
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Chocolate Chips Use dairy-free chips for vegan version

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and prepare an 8x8-inch baking dish by greasing it or lining with parchment paper.
  2. In a microwave-safe bowl, combine vegan butter and chocolate chips, heating for about 30 seconds until fully melted and smooth.
  3. In a separate small bowl, combine flax meal with plant milk and let it thicken for about 5 minutes.
  4. Mix the thickened flax mixture into the melted chocolate mixture.
  5. Sift in flour, cocoa powder, baking powder, and salt, folding until just combined.
  6. Transfer the brownie mixture into the prepared baking dish and press firmly into the bottom.
  7. In a clean bowl, melt more vegan butter and mix with sugars and plant milk, then stir in vanilla.
  8. Mix in flour, cornstarch, baking soda, and salt until just combined.
  9. Fold in chocolate chips and dollop over the brownie layer, spreading gently.
  10. Cover with foil and bake for 20 minutes, then remove foil and bake for another 15-20 minutes.
  11. Cool in the pan for 15-20 minutes before slicing into squares.
