Preparation
- Preheat your oven to 350°F (180°C) and prepare an 8x8-inch baking dish by greasing it or lining with parchment paper.
- In a microwave-safe bowl, combine vegan butter and chocolate chips, heating for about 30 seconds until fully melted and smooth.
- In a separate small bowl, combine flax meal with plant milk and let it thicken for about 5 minutes.
- Mix the thickened flax mixture into the melted chocolate mixture.
- Sift in flour, cocoa powder, baking powder, and salt, folding until just combined.
- Transfer the brownie mixture into the prepared baking dish and press firmly into the bottom.
- In a clean bowl, melt more vegan butter and mix with sugars and plant milk, then stir in vanilla.
- Mix in flour, cornstarch, baking soda, and salt until just combined.
- Fold in chocolate chips and dollop over the brownie layer, spreading gently.
- Cover with foil and bake for 20 minutes, then remove foil and bake for another 15-20 minutes.
- Cool in the pan for 15-20 minutes before slicing into squares.
