- In a small bowl, whisk together low-sodium soy sauce, sesame oil, honey, rice vinegar, minced garlic, and fresh grated ginger until well-combined. Set aside a few tablespoons for basting later.
- Place the cod fillets in a shallow dish or resealable plastic bag and pour the marinade over the fillets, making sure they are well-coated. Allow to marinate for 15-30 minutes.
- Preheat your oven to 400°F. Line a baking dish with parchment paper and arrange the marinated cod on the dish. Bake for 12-15 minutes, or until the fish is opaque and flakes easily.
