  • 12 pieces Manicotti Sturdy shells
  • 2 cups Marinara Sauce Store-bought or homemade
For the Filling
  • 1 pound Ground Beef Can substitute with ground turkey
  • 15 ounces Whole-Milk Ricotta Low-fat ricotta works as well
  • 2 cups Shredded Mozzarella Try provolone for a twist
  • 1/2 cup Grated Parmesan Can substitute with Pecorino Romano
  • 1 medium Onion Coarsely chopped
  • 2 cloves Garlic Fresh or powdered
  • 1/4 cup Fresh Italian Parsley Highly recommended for garnish
For Cooking
  • 2 tablespoons Olive Oil For sautéing
  • Salt & Pepper Adjust to taste
  • 2 tablespoons Butter Optional for flavor

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil, add manicotti shells, and cook for 4-6 minutes until slightly softened. Drain and lay on a baking sheet to cool.
  2. In a large skillet, heat olive oil over medium heat. Sauté coarsely chopped onion for 3-4 minutes until translucent. Add ground beef and cook 5-7 minutes until browned, seasoning with salt, pepper, and garlic.
  3. In a large bowl, combine the sautéed beef and onion with ricotta, mozzarella, Parmesan, and parsley. Mix well to create the filling.
  4. Using a spoon or piping bag, fill each manicotti shell with the filling. Set aside.
  5. Preheat oven to 350°F. In a baking dish, pour a thin layer of marinara sauce, arrange stuffed manicotti, then cover with remaining sauce and sprinkle with mozzarella and Parmesan.
  6. Cover the baking dish with foil and bake for 30-35 minutes, removing foil in the last 10 minutes for a golden top.
  7. Cool for 5-10 minutes before serving, garnished with parsley.
