Preparation Steps
- Shake the Delallo Garlic and Herb Veggie Marinade well, then season the chicken with kosher salt. Coat the chicken with the marinade and let it marinate for at least an hour.
- While the chicken marinates, combine the asparagus, zucchini, yellow squash, and red bell pepper with the remaining marinade in a large bowl. Toss until coated and let sit for about 30 minutes.
- Preheat the grill to medium-high heat around 400°F (204°C) and clean the grates with a grill brush, coating them with olive oil cooking spray.
- Grill the marinated veggies for about 8 minutes until tender and marked, turning occasionally, then set aside.
- Grill the chicken for about 4-5 minutes per side, checking for doneness at 165°F (74°C). Remove when cooked through.
- Let the chicken rest for a couple of minutes before slicing, and serve alongside the grilled veggies.
