  • 1 tbsp Hot Sauce Adjust to taste; substitute with a milder sauce if preferred.
  • 1 cup Shredded Cheddar Cheese Pepper jack cheese can be used for a spicier option.
  • 1 cup Shredded Mozzarella Cheese Monterey Jack cheese is a great substitute.
For the Tortilla and Vegetables
  • 4 large Flour Tortillas Whole grain or corn tortillas work well too.
  • 2 tbsp Olive Oil Avocado oil or butter can be used as alternatives.
  • 1 medium Red Onions Yellow or sweet onions can also be used.
  • 1 cup Bell Peppers, Chopped Zucchini or mushrooms can be substituted for extra veggies.
  • 1/4 cup Fresh Cilantro, Chopped Parsley can be used as an alternative.
  • to taste Salt and Pepper For seasoning.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the shredded chicken with BBQ sauce, honey, and a splash of hot sauce. Mix well until evenly coated. Let sit to enhance flavors.
  2. Heat olive oil in a skillet over medium heat. Add sliced red onions and chopped bell peppers, sauté for about 5 minutes until soft. Season with salt and pepper.
  3. Lay a tortilla flat, sprinkle cheese over half, then layer on the BBQ chicken mixture, sautéed onions, and peppers. Top with fresh cilantro and fold the tortilla.
  4. Preheat a skillet over medium heat. Cook the filled quesadilla for about 3 minutes until golden, then flip and cook for an additional 3 minutes.
  5. Once cooked, let cool for a minute before slicing into wedges. Serve warm with sour cream and guacamole for dipping.
  6. Repeat with remaining tortillas and filling, adding olive oil as needed between quesadillas.
