  • 2 cups Water
  • 1/4 cup Rice vinegar
  • 2 tablespoons Sugar Adjust to taste
  • 1 teaspoon Salt
For the Topping
  • 1 pound Fresh salmon fillet Skinless and diced
  • 1/2 cup Mayonnaise Can use lighter or flavored
  • 2 tablespoons Sriracha sauce Adjust to spice preference
  • 1 tablespoon Sesame oil
For Garnish
  • 2 tablespoons Green onions Chopped, plus extra for garnish
  • 2 sheets Nori For garnish or serving on side
  • 1 tablespoon Tobiko Optional for garnish

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then cook according to package instructions.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved, then incorporate into the cooked rice.
  4. Combine diced salmon, mayonnaise, sriracha sauce, sesame oil, and green onions in a separate bowl.
  5. Spread the cooled sushi rice in the baking dish, then layer with the salmon mixture.
  6. Bake in the oven for 25-30 minutes until golden and bubbly.
  7. Let cool for a few minutes, then garnish with green onions, nori, and optional tobiko.
  8. Serve warm and enjoy family-style.
