  • 1 cup fresh orange juice
  • 1/2 cup olive oil can substitute half with sunflower oil
  • 1 cup honey wildflower honey recommended
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon adjust to taste
  • 1/4 tsp ground clove use sparingly
  • 1/4 tsp ground nutmeg opt for fresh nutmeg
  • 1 tsp vanillin powder/vanilla extract vanilla extract is more accessible
  • 1 tbsp orange zest or lime/lemon zest
  • 1 tsp baking soda
  • 1 cup fine semolina all-purpose flour can be used as alternative
  • 2 cups all-purpose flour
  • 1 tsp baking powder ensure freshness
For the Syrup
  • 1 cup sugar
  • 1 cup honey
  • 1/2 cup water
  • 1 stick cinnamon
  • 1 piece orange peel
For Garnish

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the fresh orange juice, olive oil, honey, water, granulated sugar, and spices until well dissolved. Gradually stir in fine semolina, followed by the all-purpose flour mixed with baking powder. Knead the dough gently for about 2-3 minutes until a soft, oily texture forms, ensuring it’s not too dry.
  2. In a saucepan, combine sugar, honey, water, a stick of cinnamon, dried cloves, and orange peel. Bring the mixture to a boil over medium heat without stirring, allowing it to boil for about 4 minutes. Once it reaches a syrupy consistency, remove it from heat and let it cool uncovered while you shape the cookies.
  3. Preheat your oven to 180°C (356°F) and line a baking tray with parchment paper. Take small portions of the dough and roll them into oval shapes, about 2 inches long, then place them on the baking tray. Use a fork to create decorative lines on top. Bake the cookies for 20-25 minutes, until they are golden but still soft to the touch.
  4. Once the cookies are baked and slightly cooled, dip each warm cookie into the syrup for about 4-5 seconds, ensuring both sides are soaked. Gently flip the cookies to absorb the syrup fully. After soaking, place them on a cooling rack for a few moments to allow any excess syrup to drain off.
  5. To finish off your Traditional Greek Honey Cookies, drizzle a bit of extra honey over each cookie and generously sprinkle with ground walnuts. Arrange your beautifully soaked cookies on a platter and serve them alongside coffee or tea.
