For the Sweet Potato Layer
  • 4 medium Sweet Potatoes peeled and cut into thin medallions
  • 1 cup Water
For the Sauce
  • 1/2 cup Unsalted Butter can substitute with sea salt
  • 3/4 cup Brown Sugar light or dark
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 teaspoon Salt
For the Topping
  • 1/2 cup Chopped Pecans or walnuts
  • 2 cups Mini Marshmallows

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and thinly slice the sweet potatoes using a mandoline slicer.
  3. Arrange the sweet potato medallions in a baking dish, overlapping slightly.
  4. Melt the unsalted butter in a saucepan, then add brown sugar, water, cinnamon, cloves, nutmeg, and salt.
  5. Brush three-quarters of the sauce over the arranged sweet potatoes.
  6. Cover with foil and bake for 45-50 minutes until tender.
  7. Remove foil, drizzle with remaining sauce, and top with pecans and mini marshmallows.
  8. Broil for 1-2 minutes until marshmallows are golden and puffy.
  9. Let cool for 10-15 minutes before serving.
