Step-by-Step Instructions for Perfect Latkes
  1. Grate about 4 large starchy potatoes and 1 large onion using a box grater or food processor.
  2. Transfer the grated mixture into a colander set over a bowl and let it sit for about 10 minutes to drain.
  3. Combine the drained mixture with 2 beaten eggs, 3-4 tablespoons of flour, 1 and ¼ teaspoons of salt, and a pinch of black pepper in a large mixing bowl.
  4. Heat about ¼ to ½ inch of canola oil in a skillet over medium heat, then drop heaping tablespoons of the latke mixture into the pan.
  5. Fry for about 4 minutes per side until golden brown, then transfer to a paper towel to drain excess oil.
  6. Serve warm with sour cream or apple sauce.
