- Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
- Carefully slice the croissants horizontally with a serrated knife to create a pocket.
- In a bowl, combine softened goat cheese, honey, and cinnamon until smooth.
- Spread the goat cheese mixture over the bottom half of each croissant.
- Layer thin slices of fresh apples on top of the goat cheese mixture.
- Optionally, add a handful of fresh arugula or preferred greens over the apple slices.
