- In a large mixing bowl, combine cottage cheese, fresh blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Using a spatula, gently fold the mixture together until all ingredients are just incorporated.
- Cover the bowl with plastic wrap or a clean kitchen towel and place it in the refrigerator for 15 to 20 minutes to help the flavors meld and firm up the mixture.
- Using a tablespoon or cookie scoop, take portions of the chilled mixture and roll them into compact balls. Place the shaped bites onto a parchment-lined baking sheet.
- If you prefer a slightly toasted exterior, preheat your oven to 325°F (160°C). Once preheated, bake the shaped bites for 8 to 10 minutes.
