- Preheat your oven to 400°F (200°C). Scrub the potatoes under running water, dry them, and poke holes with a fork. Drizzle with olive oil and sprinkle with kosher salt.
- Place the potatoes on a baking sheet and bake for 55-65 minutes until the skins are crisp and a fork easily pierces the flesh.
- Cut the steak into ½-inch bite-sized pieces, season with salt and pepper. Heat a skillet over medium-high heat, melt 1 tablespoon of butter, and sear half of the steak bites for about 2 minutes. Repeat with remaining steak.
- Tent steak bites with foil to keep warm. Melt remaining butter in the skillet, scrape up brown bits, and pour over the cooked steak.
- Remove baked potatoes from the oven, slice open lengthwise, and fluff the insides. Top generously with steak bites and your favorite toppings.
