  • 1 large egg cook it sunny-side up, scrambled, or poached
  • 1 whole ripe avocado
  • 50 grams feta cheese feel free to switch to goat cheese or herbed cream cheese
  • 1 cup fresh spinach arugula or mixed greens work well as alternatives
  • 1 medium tomato can use roasted red peppers
  • 1 teaspoon olive oil use extra virgin olive oil for best quality

Sandwich Assembly
  1. Gather all your ingredients, slice the ciabatta roll in half, and set aside. Cut the avocado and tomato, crumble the feta cheese.
  2. Heat a skillet over medium heat and drizzle in olive oil. Let it heat for 1-2 minutes.
  3. Crack the egg into the skillet. Cook sunny-side up for 3-4 minutes or scramble for 2-3 minutes until fluffy.
  4. Toast the ciabatta roll cut-side down in the skillet for about 2-3 minutes until golden brown.
  5. Assemble the sandwich with spinach on the bottom half, followed by tomato, avocado, and feta.
  6. Top with the cooked egg, season with salt and pepper, then place the top half of the ciabatta roll back on.
  7. Cut the sandwich in half if desired and serve immediately.
