Ingredients
  

Crust
  • 1 package Pie Crust store-bought or homemade, at room temperature
  • 2 tablespoons Butter unsalted, for greasing muffin tin
Filling
  • 6 large Eggs room temperature
  • 1 cup Whole Milk can substitute with low-fat milk
  • 1/2 cup Heavy Cream for custard-like texture
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper adjust to taste
  • 1/4 teaspoon Cayenne optional, can substitute with paprika
  • 1 cup Fresh Spinach chopped
  • 1/2 cup Onion diced, raw or sautéed
  • 1 cup Diced Cooked Ham can substitute with bacon or sausage
  • 1 cup Swiss Cheese shredded, can substitute with cheddar or gouda

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and muffin tin.
  2. Roll out the pie crusts and cut circles, then grease muffin tin with butter and press each circle into the cups. Freeze while preparing filling.
  3. Whisk the eggs in a bowl, add milk, cream, salt, pepper, and cayenne. Mix until well combined.
  4. Fold in spinach, onion, ham, and cheese. Stir gently to combine.
  5. Pour the egg mixture into muffin cups, filling them three-quarters full.
  6. Bake for 25–30 minutes until puffed and golden brown. A toothpick should come out clean.
  7. Let cool for 10 minutes, run a knife around edges and remove quiches. Serve warm.

Notes

Chill pie crust before filling to prevent shrinkage. Fill cups only three-quarters full and sauté high-water-content vegetables before adding to the mixture for better texture.
