Step-by-Step Instructions
  1. Gather all ingredients. Dice chicken thighs into bite-sized pieces. Chop onion and bell peppers into small cubes. Slice sausage into rounds.
  2. Heat a large pan over medium-high heat with a drizzle of oil. Add diced chicken, season with salt and pepper, and sauté for 5-7 minutes until golden brown.
  3. Add sliced sausage, diced onions, and bell peppers. Cook for another 5 minutes until vegetables are tender.
  4. Stir in rice and sprinkle Cajun seasoning over everything. Mix thoroughly to coat rice.
  5. Pour in chicken or vegetable broth, deglazing the pan. Bring to a gentle boil.
