- Heat 2 tablespoons of olive oil in a large deep skillet over medium-high heat.
- Season 1 pound of chicken with salt and pepper, then cook for 5–6 minutes on each side until golden brown.
- Lower heat to medium, add 2 tablespoons of unsalted butter, and sauté 4 minced garlic cloves for about 1 minute.
- Pour in 1 cup of chicken broth and 1 cup of heavy cream, add 1 teaspoon Italian seasoning, then simmer for 2–3 minutes.
- Add 8 ounces of wide egg noodles, press them into the sauce, cover and simmer for 8–10 minutes.
- Return the cooked chicken to the skillet, stir in 1/2 cup of Parmesan cheese, and cook for an additional 2–3 minutes.
- Garnish with freshly chopped parsley if desired, and serve warm.
