  • 1 lb Chicken Breast cut into bite-sized pieces
  • 2 cups Cooked Brown or White Rice alternatives include quinoa or cauliflower rice
For the Seasoning
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Onion Powder or fresh onions
  • 1 teaspoon Kosher Salt or sea salt
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Ground Cumin optional
  • 1/4 teaspoon Cayenne Pepper reduce for milder
  • 1/2 teaspoon Ground Cinnamon
For the Kale
  • 2 cups Kale or spinach
  • 1 tablespoon Olive Oil
  • 1 tablespoon Fresh Lemon Juice or lime juice
For the Chipotle Sauce
  • 1/2 cup Plain Greek Yogurt or sour cream
  • 2 tablespoons Mayonnaise or additional yogurt
  • 2 tablespoons Chipotle Sauce adjust to taste
  • 1 tablespoon Agave Syrup or honey
For the Toppings
  • 1/4 cup Crumbled Feta Cheese omit for dairy-free
  • 1 medium Avocado or guacamole
  • 2 tablespoons Chopped Green Onions optional

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with half of the avocado oil and spices, then spread on a baking sheet. Roast for 10 minutes.
  3. Season the chicken breast pieces with remaining avocado oil and spices. Let sit.
  4. After 10 minutes, add seasoned chicken to the baking sheet and roast together for 15 more minutes.
  5. Chop kale, drizzle with olive oil and lemon juice, then massage until wilted.
  6. Combine yogurt, mayonnaise, chipotle sauce, lemon juice, and agave syrup; mix until creamy.
  7. Assemble bowls with rice, roasted sweet potatoes, chicken, kale, avocado, feta, and chipotle sauce.
