  • 1/2 cup Breadcrumbs opt for gluten-free if desired
  • 1 number Egg serves as a binder
  • 4 cloves Garlic minced
  • 1/2 number Red Onion finely chopped
  • 1/4 cup Fresh Parsley chopped, can substitute with cilantro or basil
  • 1 tablespoon Fresh Dill can substitute with dried dill
  • 1 tablespoon Lemon Zest fresh for best results
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper freshly cracked for best flavor
  • 2 tablespoons Olive Oil extra virgin for best results
For the Tzatziki Sauce
  • 1 cup Greek Yogurt plain can be substituted
  • 1/2 number Cucumber drained well
  • 1 tablespoon Lemon Juice freshly squeezed for optimum flavor

Method
 

Preparation
  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, and egg. Add minced garlic, finely chopped red onion, fresh parsley, dill, lemon zest, salt, and black pepper. Gently mix the ingredients until just combined.
  2. Using a cookie scoop or your hands, shape the mixture into 1.5-inch meatballs, placing them on a parchment-lined baking sheet.
  3. Drizzle the meatballs with olive oil and bake in a preheated oven at 400°F (200°C) for 18-20 minutes until cooked through.
  4. Prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and salt. Chill for at least 15 minutes.
  5. Serve the warm meatballs with tzatziki sauce on the side or drizzled over for a beautiful presentation.
