For the Muffins
  • 6 large Eggs Beaten
  • 1 cup Vegetables Diced (e.g., bell peppers, spinach, onions)
  • 1 cup Cheese Shredded (optional)
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk the beaten eggs. Add in the diced vegetables and mix well.
  3. Season with salt and pepper, mixing until evenly distributed.
  4. Pour the egg mixture into the muffin tin, filling each cup about 2/3 full.
  5. If using, sprinkle cheese on top of each muffin cup.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden.
  7. Remove from the oven and let cool for a few minutes before removing from the muffin tin.
  8. Chill the muffins in the refrigerator for 30 minutes before serving.
