  • 2 medium Sweet Potatoes peeled and cubed
  • 1 can Chickpeas drained
  • 1 clove Garlic minced
  • 2 stalks Scallions chopped
  • 0.5 cup Cilantro chopped
  • 1 tablespoon Cajun Spice Mix
  • 2 tablespoons Tomato Puree
  • 1 tablespoon Miso Paste optional
  • 0.25 teaspoon Cayenne Pepper adjust to taste
  • 1 tablespoon Olive Oil for frying
  • to taste Sea Salt and Pepper for seasoning
For Cooking
  • 1 tablespoon Olive Oil

Method
 

Step-by-Step Instructions
  1. Peel and cube sweet potatoes. Heat olive oil in a pan and add sweet potatoes with cajun spice. Cook until browned and tender.
  2. In a blender, combine cooled sweet potatoes, chickpeas, garlic, scallions, cilantro, tomato puree, and optional miso paste. Add cayenne pepper and olive oil. Pulse until combined.
  3. Form the mixture into four burger patties. If loose, ensure chickpeas are dried well.
  4. Heat olive oil in a pan, cook burgers for 2-3 minutes per side until golden brown. Add more oil if needed.
  5. Serve burgers in buns or on salads, topped with avocado, slaw, or pickles.
