- Peel and cube sweet potatoes. Heat olive oil in a pan and add sweet potatoes with cajun spice. Cook until browned and tender.
- In a blender, combine cooled sweet potatoes, chickpeas, garlic, scallions, cilantro, tomato puree, and optional miso paste. Add cayenne pepper and olive oil. Pulse until combined.
- Form the mixture into four burger patties. If loose, ensure chickpeas are dried well.
- Heat olive oil in a pan, cook burgers for 2-3 minutes per side until golden brown. Add more oil if needed.
- Serve burgers in buns or on salads, topped with avocado, slaw, or pickles.
