  • 1 pound Raw Shrimp peeled and deveined
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Salt kosher salt recommended
For the Sauté
  • 2 tablespoons Olive Oil or vegetable oil/butter
  • 2 tablespoons Butter or ghee for dairy-free
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
For the Creamy Base
  • 2 cups Corn Kernels fresh or cooked
  • 1 teaspoon Smoked Paprika regular paprika can be swapped
  • 1 cup Half-and-Half or heavy cream/non-dairy milk
  • 1 cup Feta Cheese crumbled

  • 1 medium Lime for juice
  • 1/4 cup Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the shrimp with chili powder and salt. Add shrimp to the skillet and sauté for 3-4 minutes, or until pink and opaque. Remove and set aside.
  2. Add 2 tablespoons of butter to the skillet. Once melted, add the chopped onion and cook for about 4 minutes, stirring occasionally until translucent.
  3. Stir in 3 cloves of minced garlic and cook for 2 minutes, avoiding burning.
  4. Add 2 cups of corn kernels and 1 teaspoon of smoked paprika. Stir and cook for 3-4 minutes.
  5. Pour in 1 cup of half-and-half, stirring as it simmers for 2-3 minutes until slightly thickened. Add 1 cup of crumbled feta and mix until melted.
  6. Squeeze the juice of 1 lime over the dish. Return the shrimp to skillet and stir gently for 2 minutes to warm through. Garnish with remaining corn, lime slices, and cilantro.
