- In a mixing bowl, cream together the full-fat cream cheese and egg until smooth. Add vanilla extract and blend well.
- In a separate bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture, stirring gently until fully incorporated. Cover and chill in the refrigerator for at least 1 hour.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop the chilled dough into 11 equal-sized balls and place on the prepared baking sheet without flattening.
- Bake for 15 minutes or until the edges start to turn golden and the centers are soft.
- Let the cookies cool for at least 15 minutes before moving them.
