Step-by-Step Instructions
  1. In a mixing bowl, cream together the full-fat cream cheese and egg until smooth. Add vanilla extract and blend well.
  2. In a separate bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
  3. Gradually mix the dry ingredients into the wet mixture, stirring gently until fully incorporated. Cover and chill in the refrigerator for at least 1 hour.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop the chilled dough into 11 equal-sized balls and place on the prepared baking sheet without flattening.
  6. Bake for 15 minutes or until the edges start to turn golden and the centers are soft.
  7. Let the cookies cool for at least 15 minutes before moving them.
