  • 1 cup Sweet Potato Packed, from a small sweet potato
  • 1 cup Canned Coconut Milk Choose a brand without fillers
  • 1 tbsp Flaxseed "Egg" Mix with 2.5 tbsp water and let sit
  • 1/4 cup Olive Oil Can substitute with coconut oil
  • 1/4 cup Pure Maple Syrup Or raw honey
  • 1 cup Organic Brown Rice Flour Buckwheat flour can also be used
  • 1/4 cup Organic Coconut Flour
  • 1 tbsp Aluminum-Free Baking Powder
  • 1/2 tsp Sea Salt
  • 1 tsp Cinnamon Powder Adjust based on preference
  • 1/2 tsp Ginger Powder Fresh ginger works well
  • 1/2 tsp Turmeric Powder For color and benefits
  • 1/4 tsp Ground Cloves Adjust or omit based on taste
  • 1/4 tsp Nutmeg Adjust or omit based on taste

  • 1/2 cup Nuts or Seeds Walnuts or sunflower seeds
  • 1 cup Butternut Squash Can substitute for sweet potato

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Puncture a sweet potato and bake for about 1 hour until soft.
  3. Grease your muffin tray with coconut oil.
  4. Once cooled, scoop 1 cup packed of mashed sweet potato into a bowl.
  5. Add flaxseed "egg," coconut milk, olive oil, and maple syrup. Mix until smooth.
  6. In another bowl, whisk together the dry ingredients.
  7. Gradually add the dry ingredients to the wet mixture, stirring gently.
  8. Fill each muffin cup about 2/3 full with batter.
  9. Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
  10. Allow muffins to cool in the pan for 10 minutes before transferring to a wire rack.
