  • 1/2 cup Salted Butter Softened for easy mixing.
  • 1/2 cup Granular Swerve Sweetener Can be substituted with another dry sweetener.
  • 2 tablespoons Lemon Juice Opt for freshly squeezed juice.
  • 1 tablespoon Lemon Zest Grate only the yellow part.

Method
 

Step-by-Step Instructions
  1. Start by allowing your cream cheese and salted butter to sit at room temperature for about 1 hour.
  2. In a large mixing bowl, combine the granular Swerve sweetener, lemon juice, and lemon zest.
  3. Add the softened cream cheese and butter, and blend using an electric mixer on medium speed for 2-3 minutes.
  4. Pour the creamy batter into round silicone molds, filling about 16 molds and tapping to eliminate air bubbles.
  5. Transfer the molds to the freezer and allow them to freeze for a minimum of 2 hours.
