  • 1 medium Red Onion Finely chopped
  • 1/2 cup Lime Juice Freshly squeezed
For the Sauce
  • 1 cup Tomato and Clam Juice Cocktail Can substitute with homemade mix
  • 1/4 cup Ketchup Or omit for a lighter sauce
  • 1/4 cup Chopped Cilantro Or use parsley
  • 2 dashes Hot Pepper Sauce Adjust according to spice preference
For Serving
  • 2 medium Avocados Diced, add right before serving

Method
 

Step-by-Step Instructions
  1. Prepare the onion by finely chopping the red onion and mixing it with lime juice. Let it sit for 10 minutes.
  2. Combine the shrimp, diced tomatoes, cucumber, celery, jalapeño, and season with salt and pepper in a bowl and toss gently.
  3. Make the dressing by whisking together tomato and clam juice cocktail, ketchup, cilantro, and hot pepper sauce in a separate bowl for 2-3 minutes.
  4. Fold the dressing into the shrimp mixture and gently stir in the marinated onions.
  5. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for best flavor.
  6. Just before serving, fold in diced avocados and serve in bowls with lime wedges.
